I cooked the green beans in a skillet in a little bit of bacon grease. They were very good but next time I’ll just cook them in water and add a tiny bit of bacon grease. It was a bit too much. But they were tasty and this is one green veggie that I like.

They look amazing. You can also make them into greenbean almondine for a change some times. A webpage called wholesome yum has a pretty good recipe for it.

@Llamapalooza, why do few calories today? This level will greatly depress your basal metabolic rate. The body will think it's "starving" and *conserve* energy, not burn stored fat. For the same reason, the liver will dump stored glycogen, *raising* your blood sugar, because of the low carb and calorie levels. I know this seems contrary to "common sense," but that's really how the body works.

To satisfy your sweet tooth, add 112g frozen blueberries (13.63g - 3.02g fiber = 10.61g net carbs, 0.47g protein, 0.72g fat, 57 calories) with 4T full-fat unsweetened whipped cream (1.48g carb, 2.68g fat, 0.4g protein, 32 cal.). You'd still have room for more fat and protein -- like adding another hamburger at dinner!

You're averaging less than 1100 calories/day for over five weeks now, and your average daily fat consumption is very low. This is too low on a LCHF/keto regimen and may be why your weight loss has stalled. On this WOE, you need to eat fat to fuel ketosis.

How are green beans so many carbs? On their own? I’m trying to eat more veggies but of course, my faves are peas, corn, neither of which I can have. Grrrrrr. And I’m trying to balance staying under 20 carbs and enough fat. I just have to keep working at it. Mentioned below was using 80/20 hamburger. I know I need the fat but not a fan of greasy hamburger. I’ve got bacon and sausage I’ll try eating more of. I’ll try to eat some broccoli tonight. I made another mile today walking and going again shortly to take boys back out. So my exercise has gotten real. I’m feeling really well right now. Not as much energy as yesterday but managed to go to Walmart for paint and dog food.

Miraculum: I am still going to eat dinner so get my calories up, cook asparagus in olive oil. I might be working so hard to keep carbs down that I associate that with lower calories. Keto isn’t as easy as I hoped. It’s kinda hard.

Looks really good! So much better to have green beans with a small burger (without the bun) instead of fries or chips!

The beans only had 6 net carbs. That is good!!! I eat them often. And it is good to eat veggies that you like. Corn is really a grain and not a veggie (although the government classify it as a veggie) so it is carby. And peas are a kind of starchy fruit so hard to incorporate on our diet. But there are many veggies that will work so keep at it. I often do snowpeas instead of peas. They are really good stir fried

@Llamapalooza53, your food diary for today says "85/15" hamburger -- lower fat and calories than 80/20. The green beans are fine! Another hint: If your food scale measures grams (mass) or ounces (volume), use grams for a more accurate reading. Air takes up space in a "cupful" of green beans, while using "grams" measures the actual weight of the green beans.

@Llamapalooza53, ah! I understand! You're recording food as you eat it. Planning your meals a day ahead (instead of as you go), will allow you to choose foods to get the right macro balance. That makes it *a lot* easier!

For some of us ~ Keto 20 carbs PER DAY does not leave a lot of room for "extras" and "treats" when you are trying to get in as much nutrition as you can from truly satisfying foods and meeting your macros. "Extras" and "treats" have to be relegated to once a week or sometimes less ... then they really are 'treats' and not a daily ritual.

I don’t bother using 80/20 ground beef. Too much fat is lost anyway. It’s harder for me to tract.

@catzz2, I agree completely. For example, I was interested in "fat bombs" until I began planning my LCHF/keto meals in advance. I prefer using lots of real butter on my vegetables to cooking them with or drenching them in olive oil or coconut oil, or eating "fat bombs."

I love with Avocado oil and chopped fresh garlic ... Mmmmm, I cook allot of veggies that way with Chicken breast, etc to make a meal. Even better the next day for leftovers.

the best way I have found to cook them involves bacon grease. but I boil mine until al dente and then I fry them in bacon grease as a finisher. the flavor soaks in nicely, try it and I hope you like it!!

@holmasa, when I'm preparing fresh veggies, I steam them a bit in the microwave (covered, with a little water) and then finish them off in the frying pan I used for preparing the protein (often, just butter and minced garlic). My husband is used to discarding the bacon fat when he does our "Sunday brunch." From now on, I'm going to ask him to save it for sauteing.

Suggestion: Next time try some Mrs.Dash, Table Blend Seasoning on those beans and I promise you won't miss the grease. i've used it on my food over 20 years now, Good Luck!
