Took a page out of Draglist's cookbook. Took his wife's meatloaf recipe, tweaked it to fit my taste and made pressure cooker meatballs. 20oz of 80/20 chuck, 12oz of pork sausage, 3 eggs, 2Tbl of Chipotle Tabasco sauce, salt, pepper, some minced onion and a little garlic and herb seasoning. Rolled them into 5 evenly sized meatballs and cooked them in the Quick Pot. Came out heavenly and really satisfied my craving for Meatloaf. 648 calories and no carbs. Although, I do wonder about the calorie count, in as much as a great deal of fat cooked out of the meatballs and remained in the pot.
