Tater tot casserole in my crockpot. It’s a favorite for my children and of course I had to have it as well ;). Not the healthiest but I had a half portion and one piece of toast (45 cal wheat instead of white) instead of two. I hadn’t realized how high in calories it was. I made a double batch with two pounds of meat and they ate every last drop so my lunch tomorrow of the leftover meat from it isn’t going to happen lol. But man have I missed cheese!

I love tater tot hotdish (as we call it n mn)! Sounds like you didn't go wild, and the kids helped, lol.

No I didn’t go wild lol. Honestly between my hubby and 12 yo daughter they ate probably 70-75% of it! She eats what I used to and hubby eats 2-3x what I used to. Now I eat about what my 9yo & 3yo eat together. Both are light eaters but tonight the 9yo ate the same as me lol. Right now I’m focusing on CICO while I try to adjust/figure out macros. I seem to lose more with 38-42% carbs which goes against most of what I find online. If it drops below 36% I maintain or gain, same for the weeks it’s been above 44% not including the first two weeks that I tracked my intake. I love seeing what everyone else is eating and how it works for them :).

Oh man, Do I love the simple casserole! I am certainly suggesting that your cooking skills are simple, but cheap basic ingredients thrown in and the magic of the simmer does it all. I grew up on the mince casserole.

@fady my cooking is quite simple;). I’ve never learned how to use fresh herbs :/. Casseroles are quick and easy and with 3 active kids it’s so much simpler than a complicated recipe. I was raised on meat and potatoes and so was hubby. I’ve been working at ‘Whole Foods’ eating mostly chicken and veggies but that gets old fast. Now I’m experimenting to see just what level of carbs works best for me and how much beef I can add back in and still maintain or lose a bit. Then I’ll go back to chicken and veggies for a couple weeks. I’d gotten so used to processed foods that it’s imposisbel for me to cut them completely but a snack of a rice crispy treat and some jaw breakers through the day help me to not be hungry constantly and not feel so restricted.

Well I’m honest- my skills ARE simple ;). A friend grows her own herbs and is trying to teach me by phone but it’s hard to learn that way lol. Plus I love lemon pepper and could eat it as my only seasoning if my family didn’t complain lol.
