Balsamic & Parmesan Roasted Cauliflower

A yummy side dish or meal.

Ingredients

Directions

  1. Pre-heat oven to 450° F (220° C).
  2. Discard the base and leaves from the cauliflower, and cut the remaining cauliflower into small pieces (like you would to broccoli).
  3. Toss in a large bowl the cauliflower, oil, salt, thyme, and pepper. (Use pepper as preferred and if you like use a little lemon pepper as well.)
  4. Spread the cauliflower on a cookie sheet and place in the oven for 15 to 20 minutes so it softens and starts to turn golden brown.
  5. Take the cauliflower out and toss it with the balsamic vinegar and the parmesan cheese.
  6. Return to oven and roast for another 5 to 10 minutes so the cheese melts.
  7. Note: depending on the type of parmesan cheese, the calories can end up higher or lower.

I love pepper on cauliflower but this was way too peppery. Also, didn't need all that parmesan cheese with the extra calories. Next time, I may forego the cheese and cut down on the pepper. Olive oil, balsamic and thyme would do nicely, and add salt & pepper when done.

Very tasty! Only used a sprinkling of fresh ground pepper, other than that followed recipe. Hubby and I ate the entire cauliflower as a side for BBQ grilled chicken thighs with a fresh mixed greens salad and avocado.

To make it nutritarian, I will substitute the parmasean cheese with nutritional yeast, but it will still be as tasty as the picture!

I haven't tried this but my feeling is that it could be adjusted incrementally to serve any number o f people and still taste great! How could it go wrong? No way. No way, indeed!

I'm working on keeping my fats down so I actually left off the balsamic and parmesan and it was still yummy.
