Took almost two days to pre-prepare our signature fabulous Chinese dinner for some special friends. I kept MY rice intake to almost zilch, but the deep fried chicken wing drum sticks and deep fried shrimp were darned near irresistible so I over ate in that department. Hot and spicy beef didn't go off the reservation TOO much - ahem. But since I have to watch my blood sugar, all this was going to be a problem. To my surprise this morning, my sugar count wasn't that bad considering.
Now, if it would only warm up a bit so we can get back to our daily four mile + walks, the blood thing wouldn't be as big a problem. C'mon Spring!
