I weigh myself almost every day when I wake up (some days I sleep in and don't have the time to :P), and I've been going up and down and up and down all throughout the week. I'm not sure what's going on.

My body also fluctuates. In the morning I'm generally okay, but soon after eating lunch I'll start to feel bloated and everything feels tighter. Especially if I eat a lunch with that is a little higher in carbs, even when the carbs are vegetables. My clothes feel tighter in the afternoon compared to the morning

I do know I am losing weight overall, but is it just water weight?
How can I tell without using any fancy instruments?

yes, our bodies make up around 60% water. Google "why the scale lies" for insight in to water weight fluctuations. It's very normal to go up and down all day.
