Using the crock pot for meals, make ahead or just for today is always on my menu!

This week I made a pot roast....NO ADDED SODIUM...by putting roast into crock pot, turning on LOW and adding one can of NO SODIUM ADDED DICED TOMATOES, then onion, garlic, rosemary, sage, and thyme as well as mesquite flavor seasoning.

When the meat is "falling apart tender" I add potatoes to the pot and have a meal or these can be cooked separately.

The second day, more of the same, and add other veggies as side dishes.

The third day, take the pot liquor which contains small chunks of meat, and add all left over veggies to liquor, add water if needed or more tomatoes or tomato juice and presto a pot full of stew. Serve with low sodium crackers, bread or corn bread.
