We have lots of leftover soup in the fridge so that’s what I've been eating every day this week. Oatmeal for breakfast, salad for lunch, yogurt and nuts for snack, and soup for dinner. So far I haven't gotten tired of it yet. I will try to include more soup in my diet until it gets too unbearably hot this summer.

Yesterday I finished off our corn chowder, tonight I'll be having chicken noodle soup. I have more leftovers than usual right now because my husband's been out of town for work. I keep meaning to find a good black bean soup recipe. We had an amazing black bean soup at a restaurant while on vacation a number of years ago, even my anti-bean husband really liked it! What kinds of soup do you like?

I love soup too! I actually never get tired of it, and eat it year round, even through the summer. Enjoy your soup!
