I discovered some interesting facts during my n=1 trials with resistant starches:

When I cook a sweet potato and cool it for 24 hours, it apparently (as per my glucose tolerance tests) retrogrades approximately 1/2 of the starch to the resistant type. If I let the same potato set in the refrigerator for 3 or more days, it retrogrades even further to where it is over 90% RS. This is good news, because it means I no longer have to include the retrograded sweet potato starch in my insulin calculation (ie: carbs).

This is not the only bonus of retrograding. In addition to the benefits of the vitamins, minerals, and anti-oxidants, the RS is an excellent nutrient for the good gut microbes. The kind that provide gut lining and brain tissue nutrients.

So resistant starch is better for the digestion? I've never heard of this... Interesting...

Could you explain this more. This is very interesting. My DH is a diabetic and loves sweet potatoes. I would like to have them return to his menu if it would not elevate his glucose.

TG I eat a mixture of raw and cooked. It depends on the item. Some are more nutritious or effect my BG's one way or the other. I don't find any use for grains in my life, but that's just me. Everyone has to experiment on themselves and come up with solutions that work for them. As I have said many times, we're all different. I put a link in my journal entry above to an interesting podcast on the subject of resistant starches by a couple of the internet pioneers in this area. Worth a listen, if for nothing but entertainment purposes. It's hilarious in places, but there are some real nuggets of wisdom hidden in there. Watch it and get some clues to other places to further your own research. As many of you know, I'm an insulin dependent diabetic, so my POV is a bit different than many folks out there. I can't partake in normal starches without causing my blood sugar to skyrocket, which requires industrial doses of insulin to cover, which causes fat to be stored and inflammation and plaque build up in my blood vessels, etc. Hence my interest in RS as a way to get certain nutrients from certain nutrient rich starchy foods. I've had mixed results, as you can see from the numerous n=1 glucose tolerance tests I have posted here in the past. My best resuts with RS has been with green un-cooked plantains. However, recently, I have found that retrograding sweet potatoes has reduced the digestible starch of these very nutrient rich tubers to a very acceptable level for me. About 90% less than a normal baked sweet potato. If I limit my intake to ~100g at a time with lots of added grass fed butter, I require just a tiny amount of bolus insulin. This new (to me) concept of a gut biome is fascinating, and I am investigating it very thoroughly. Stay tuned. Meanwhile, get yourselves out there and check this out for yourselves.
