59Carol's Journal, 20 Feb 21

Another satisfying week on the weight front! I have lost 1.4 pounds which suits my goal of losing 1 pound a week. Last week I lost 2 pounds however the week before that I had gained 0.8 pound so I am at 2.6 pounds in 3 weeks. If I log in another 1.4 next week I will have the pound a week average for this month. Quite doable.

I have spent the last two days doing batch cooking. I find that having a variety of pre-portioned meals available is extremely supporting of my weight loss goals. On Thursday I made homemade vegetable broth (26 cups), a homemade mushroom-barley soup and a pasta with pumpkin sauce. On Friday I froze the vegetable broth, made kombucha, made a cauliflower and potato in a nutritional yeast and bean sauce casserole (a bit like scalloped potatoes) and a giant roasted vegetable side (16 cups). Basically two days of cooking however I have nearly a month in meals (added to what was already made). I will be making more soup in a week though.

Today is exciting for me. I will be down in my basement arranging furniture and putting things in their final resting places! I woke up this morning planning which parts I will do first! Sometime next week the fellows will be totally done. They have a few odds and ends left. I haven't taken any more pictures. Next week I will share some.
80.3 kg Lost so far: 41.5 kg.    Still to go: 3.2 kg.    Diet followed: Reasonably Well.

Thank you for your support! I got lots done in the basement yesterday- very gratifying. Hope to get more done today. I should take a picture of my freezer sometime and share it! As a person living by myself, I find cooking and freezing to be a good way to eat well while not trying to figure out what to cook each night.

As a fellow person who lives by myself, I absolutely agree with you - batch cooking keeps things lively and interesting, while saving the chore of having to cook every night! Well done =)

So glad things are going well for you. You (and the guys) have spent a lot of energy and time on your basement. It's gratifying to see the results. Well, you are nearing your goal. You've sure lost a lot of weight, and have been an inspiration to all of us, to stick to it. My husband is doing well, but my only sister/sibling passed this week, I will miss her.

Snowwhite- I am sorry for your loss. That was unexpected. You were so worried about your husband's health and then it is your sister who dies. Family are so hard to lose. Take care.
