moufette123's Journal, 12 Oct 19

Wow, it feels like it's been a while since I had that kind of loss! But I'm pretty sure that if I check my weight history, it will show small waves for the last few months. Still seems like my body likes to maintain around 153 to 155 lbs.

I have been loving my homemade (well, from a recipe) chocolate fudge recently. I need to make some again, but my homemade (again from a recipe) low-carb condensed milk, that I made two days ago in order to avoid throwing away my whipping cream that was about to go bad, is not thick enough. Maybe it needs a few more days in the fridge. Since I need a thick-enough condensed milk to make my fudge, I need to be patient.

I finally tried out the (very expensive, almost $20 CAD) Boca Sweet, which is made from kabocha, a Japanese pumpkin. It reminds me of allulose (similar glycemic index, rounds out to 0 calorie per teaspoon, whereas allulose is 1.6 calories per teaspoon), but it tastes a little sweeter and almost no aftertaste.

It's really sunny outside this morning, but it's supposed to rain early this afternoon until the end of the day. The sun should be back tomorrow; perfect for the Thanksgiving holiday.

Moufette, have you tried making home-made creme fraiche, and using that instead of condensed milk?

never heard about low carb condenced milk. Interesting. You can freeze whipping cream

Moufette, I haven't made it in a long time - I think you stir a tablespoon of cultured buttermilk, yogurt or sour cream into whipping cream, and leave it at room temperature overnight. Recipes online say to use buttermilk; I'm not sure what the difference in cultures / flavors would be. Then, to use as a substitute for condensed milk, add sweetener to taste. This could be significantly lower carb than sweetened condensed milk, depending on the sweetener you use.

I went to a wedding. counted the calories- almost 2800. next day skipped meals. Did not gain. Friday had a potluck gathering. Slightly went over my calories. skipped breakfast and lunch. well, today had a dinner visit at a friend's home. I was able to stay within my limits. I have been trying this new system for 2 weeks now. Everyone asks if I lost weight. well, I will weigh myself on Monday
