Happy Friday Everyone - What an amazing morning. I had a beautiful ride into work. I had a great cup of coffee and am feeling awesome. I had a great workout last night and slept really hard (even missed my alarm and woke up 15 minutes after the alarm). A warm and cozy bed is a subtle foe. We made Polenta with parmesan cheese, mushrooms, sundried tomatoes, olives and bell pepper last night. We like to have this as a breakfast carb/starch instead of potatoes. It turned out awesome. cals: 101kcal fat: 3.36g carbs: 15.55g prot: 2.85g; so the numbers worked out good for me. I didn't take a picture but the recipe is in my cook book if your interested. my lesson learned is to add the cornmeal slowly to the water so you don't get lumps...I had lumps. still tasted amazing.
