First time making a Egg Beater Frittata: with asparagus, turkey bacon, 2% Milk Italian Shredded Cheese, & Potato. I used Lawry's Seasoning salt on the potatoes, which I will skip next time because the turkey bacon is REALLY salty. It was actually surprisingly good! I made Hollandaise sauce (a packet mix), thinking to cover up the egg beater taste. It didn't need it! Great experiment! Now onto the rest of date night!

I often make some kind of frittata for breakfast - just chop whatever is left-over veggies and protein in the fridge, cover with eggs or egg beaters - easy, filling and tasty! I fund that vegetables add moisture, so you don't need any sauce on top. I often add tomatoes just for that reason. Frozen potatoes O'Brien usually work very well for it too - easy, already pre-chopped, and you can get the kind that has no other added ingredients besides potatoes, peppers, and onions. I also like to add a tablespoon of bacon bits. Even thought they are full fat ones, you don't need much, so it only costs extra 50 Cal for a delicious bacon flavor all over the frittata!

Thanks for the idea lenakh. I am still veggie pickie, and I am not supposed to eat onions or citric acid. I find that it is in a lot of things so I don't buy prepared or frozen food that often. I cut out the real bacon for cholesterol reasons. Believe you, me, I would use real bacon in a heart beat if I could. LOL

HOORAY for date night!!! I love those 2 words together! Hubby and I have a little date night planned when I return home from visiting my family. We will have our whole house to ourselves! No kids! WOOHOOO!!

That's sounds fun Connie! I will have your potatoes and you can have my onions! LOL We HAVE A PLAN! Our date night is mostly every Wed., unless we have to switch it to Mon because of scheduling. They are fun! We dont have the $$$ to go out, but we hang together which is important. :-)
