Hindsight is a wonderful thing!!!

Healthy doesn't equal low fat or low cal.

I made the avocado chocolate mousse and the macademia nut whipped cream on Saturday. Both recipes vegan and super delicious but high in fat and I ate it all. Thats a whole avocado, 1/4 cup of raw cocoa, nearly a can of coconut milk(17%) two cups of nuts....phew and I still have some vegan cheese cake left too ;)

Must have ate something with dairy in yesterday. My tum is churning and sore. I leave the other nasty side effects out ;). Do they add dairy into mince? I know beef mince is technically dairy but so far meat hadn't effected me. More experiments!!!

I'm sitting here just salivating reading about the chocolate mousse and macademia nut whipped cream. Sounds delicious! Hope your stomach feels better.

If you're all into vegan and no dairy and like avocados, I'll give you a wonderful sugar-free, gluten-free, vegan, no bake lime pie recipe. I made it myself (some already know that I am always the "experimenter" when it comes to cooking) and it's delicious. The recipe goes like this. You will need a pie dish, it doesn't matter if it's disposable or not. Use a food processor to chop about 1 1/2 cups of nuts (walnuts, peanuts, pecans, it doesn't matter) and about the same amount of dried fruit that is very pulpy (dates are the best, figs second best, but you can use all kinds of fruit as long as they're pulpy and sticky, dried prunes work great too), mix them and knead them together well then form the layer for the pie. If you don't have access to dry pulpy fruit you can use about 3/4 cup of sugar-free preserve of any kind. Filling: 2 medium avocados, 1 cup coconut butter (from coconut milk can), zest from one lime, juice from half a lime, 2 tablespoons of stevia in the raw or splenda (more or less, depending on your taste) - mash the avocados with a fork then use hand mixer to blend everything. Top it with the filling, decorate and let sit in the fridge half an hour. It will be a little high calorie due to the nuts and dried fruit, but you don't have to eat more than a couple slices at a time at most.

Heh, on this one people couldn't believe the filling was avocado, as they've never heard of avocado in something sweet. But I already knew that in South America they do eat avocado in the "sweet" setting, I have a friend who is from Brazil and she told me that over there they actually dip avocado in honey and eat it, and it took her a long time to get used to eat avocado in savory dishes. That gave me the idea. I tried first using xanthan gum on the avocado for thickening the filling but didn't come out as good.

wouldn't the whipped cream be dairy? and what is beef mince? I thought it was hamburger?

Thanks Dayberndt for the recipe. Straight down my street and I will give it a go. Rckc: Just because its whipped it doesn't contain dairy. You soak the macadamia nuts, pop them in a blender then add coconut milk, agave syrup and vanilla. Not excactly like your dairy cream but surprisingly delicious :)

yum that sounds delicious. I love macadamia nuts but they are so expensive here. I'm afraid I am not very adventurous when it comes to cooking!
