Yesterday and today were absolutely perfect food days. For dinner, I have been throwing dark color veggies (frozen broccoli, spinach, Brussels sprouts or carrots) into a skillet with 1 tsp olive oil. I saute them for a bit, throw in 1 cup of diced tomatoes, 1/2 cup of garbanzo beans, garlic, tumeric, cumin, smoked paprika, garam masala, a little salt, a lot of black pepper and let the veggies steam for a bit with the cover on. Then I throw in 1/2 cup brown rice and 1/4 cup feta cheese, let them get hot and serve. It's amazingly tasty and SO GOOD for me. I've been doing that for over a month now and can't see me getting tired of it any time soon. My biggest problem is, I still want ice cream as well. LOL!

Oh, I forgot the big squeeze of lemon juice. It's not quite the same without it.

It really is. It's what I call "Rachel Ray" cooking. You just throw in whatever appeals to you at the moment in amounts that seem about right. It comes out a little bit different each time but tastes amazing and all of the ingredients are super foods. How anything this healthy can taste this good is amazing. I'm on my way to make a skillet full right now. :-) Today, I'm using spinach.

Don't forget the lemon juice. I didn't list it with the original ingredients. I hope you love it. Hugs! (I keep the brown rice cooked in one cup containers in the freezer, so I always have it handy.
