Not a record setting day on scales or with fasting blood sugar. Day started out well, but quickly went downhill when I ate hubby's special beans and cornbread for lunch. Then I made lemon blueberry zucchini bread and a zucchini cheese casserole out of the last half of that 3 1/2 lb zucchini left from yesterday. ( one zucchini made four Mexican zucchini boat meals, the bread, and a casserole that will make at least 2 meals.)I did eat a slice of the delicious bread for a snack but saving the casserole for tomorrow. Went out to eat supper with friends at BBQ restaurant. Pulled pork was ok but I ate the cole slaw and bread that came with it! Must get back to normal eating!

Macros: 36/46/18; 1579 calories; 15.8 fiber; 127.18 net carbs. -443 net kcals.

It all sounds so delicious though. I was just looking at some zucchini/lemon bread recipes, the addition of blueberries sounds perfect.
