Thank you for all the lovely comments everyone! Hubby made a big batch so it's lunch for two more days, but I'd gladly send you some Melissa! The ginger is nice and warming in these chilly days. He got the consistency right this time too - last time it was runny so we drank it in mugs, but I prefer this thicker ''almost-puree''. xxx

I do mine with whatever volume of butternut squash, add just under half that volume of potato, cover just a bit over it with water, boil, add coconut milk/cream and curry powder. I'm for making your version this week though ! ❤
