Jambalaya with chicken breasts, andouille sausages and shrimps over brown and wild whole rice. Took two hours to peel, slice and dice plus one hour to cook, but it was pretty good. 540 kcal/serving but I am stuffed for two days and it's 44%/20%/36% carbs (60g)/fat (12g)/proteins (49g), 700mg sodium. The scale is going to look at me sideways tomorrow morning, but I needed a good meal.
