Yes! I kept it low calories! This was a portion for 1 person. In a frying pan I used 1 tbs of olive oil, half a clove of minced garlic, half a cup of sliced bruxels sprouts, half a cup of thinly sliced carrots, half a cup of chopped red peppers, about 8 tiger shrimps cut in halfs, 2 tbs of minced green onion, half a tbs of red thai curry paste, a splash of soy sauce, lime juice, a few crushed pecans on top. Stir try your veggies first, then add shrimps, pea sprouts, garlic, curry paste, green onion, lime juice, soy sauce, nuts. Any veggies work!
