Yum. Had left over roasted chicken. Kept throwing veggies and stuff in, until I had a chipotle/tomato sauce, with chicken on red cabbage as “noodles”. Ate enough to feel stuffed, had seconds and it was only 339 calories total.

Thanks! I’ve been taking time to make my meals look fancy. That way I can trick my brain into thinking healthy and low calories is really good haha. It’s working.

Chicken cabbage pasta. I fried together (without any oil, just stirring frequently) 27g bell peppers (red and orange) 65g mushrooms 5g red cabbage Then added the left over chicken I had 133g Fried a bit longer Then pull this mixture out and set aside. I added 2 cloves of garlic chopped fry for 1 min. 140 grams tomato 1 tsp basil 1/2 tsp thyme 1 tsp oregano 1 tbs of (sera brand) hot pepper paste, you can use tomato paste if you don’t have this 1tsp la costena chipotle peppers in Adobe sauce, chopped finely. (I just cut the whole can up in a mason jar, with kitchen scissors as soon as I open it, then store in the small mason jar in the fridge. Simmer for a bit until the tomatoes turn kid of saucy Add a sprinkle of brown sugar ( no more than a level teaspoon) Then I added I think 1/4-1/2 cup-ish of water Then I added 115g of red cabbage finely chopped, you could use green cabbage too Covered and simmered at a light boil for 5 mins, if theres too much water still, simmer with lid off until you have a good thick-ish consistency. Plate the cabbage, put on the chicken mixture, Then pour on remaining pan sauce. Then I topped with some lightly pickled cabbage and carrots I had from a low calorie coleslaw I had left over. And topped with some salted egg yolks I made a while back. Some more salt and pepper.
