I agree, Kenna! Roasted veggies are a favorite of mine too. It brings out wonderful flavors. And my plate was only 520 calories 😁

Wifey, I used Johnsonville Hot Italian sausage this time. I cut 2 links into bite size pieces. I have used other types of sausage including turkey sausage when I have cooked similar dishes like this.
