Personally, I love cauliflower, but you are right, it tastes NOTHING like rice or pasta!!

For me, if I crave something and don't eat it, I eat everything thing else trying to satisfy the crave. I try not to banish any food as I don't believe that's realistic. There are ways to make favorite foods healthier while still satisfying the craving.

Sorry to hear you didn't like the cauliflower cheese. I love all things cauliflower, but then, I don't expect it to taste like pasta. It has its own tasty flavor.

Try zoodles and cheese, I love it! I find cauliflower can have an unsatisfactory taste, myself.

Just a thought— I love Mac and cheese but do not eat it often for obvious reasons. Now I make it with one third past, one third cauliflower and sometimes the last third will be broccoli. I am not a keto person so I make a lighter cheese sauce out of real ingredients. It has come to be our go to M&C recipe, not because it is “healthier” but because it is darn good. I don’t rice the cauliflower, I just cut it up in smaller pieces. Portion co trol and moderation, and real food.
