Dinner tonight. Marinated portobello mushrooms, fried feta cheese quesadilla, and salad of fresh corn cut off the cob, cherry tomatoes, avocado, and radish drizzled with a little Good Seasons dressing. My calculations come to 565 calories for everything you see on this plate (including the marinades and fat for cooking the quesadilla). This. Was. So. Good!!! It was tasty, filling, and satisfied my desire to bite down into something. I made enough of the salad to take to work for lunch tomorrow; I will likely add some cheese or salami (or both) to make it heartier. Or maybe I'll just eat more of it! Very few calories and very satisfying.
