I found this bread with 7g per slice. If it sucks then maybe I’ll lose any craving for bread. But I had tuna in the pantry so decided to make tuna salad. Looking forward to it later.

A new recipe. Keto chocolate mousse.
1 Cup Heavy Whipping Cream
1/4 Cup Unsweetened cocoa powder, sifted
1/4 Cup Lakanto Powdered Sweetener
1 teaspoon Vanilla extract
1/4 teaspoon kosher salt
Whisk the cream first and when fluffy, add the ingredients and whisk/blend together. I tried doing it in my NutraBullet because my daughter took my hand mixer to Winslow to make brownies.
A hand mixer would be perfect. It was pretty darn good!

So, I tried this recipe this afternoon because I had cut up a chicken breast into small pieces and pan fried it in olive oil. I wanted a Caesar salad but didn’t have the dressing. So I looked for a keto recipe and found this one:
Caesar Dressing
3 cloves garlic, finely minced
1 ½ teaspoons anchovy paste
1 teaspoon Worcestershire sauce
2 tablespoons fresh lemon juice (about ½ a lemon)
1 ½ teaspoons Dijon mustard
¾ cup mayonnaise
Salt and Pepper to taste
It tasted okay, it was edible. But when I went to get my garlic cloves, they were mushy and moldy. I ended up using minced garlic and only used one tablespoon.
Then I didn’t have anchovy’ paste, never have even heard of it. And I didn’t have fresh lemon so used the bottled squirt stuff.
So it lacked the exact flavor I wanted and I’m sure if I had everything I needed, it would’ve been. Great..
