This was amazing!!
Each serving: 4oz chicken breast, 1 oz cream cheese mixed with fresh chives, 1/4c pepper jack cheese, diced bacon, roll up and bake 375* 25-30min.

Thanks all! Steven, I started with raw chicken and pounded it thin so it was easier to roll up! Then just spread on the cream cheese/ chives mixture, sprinkle pepper jack and bacon on top and roll up! Secure with a toothpick and bake.
