Well, I'm thinking my scale actually did troll me with the 317 reading and I've actually been stalled at the 319/320 mark for a few days. Going to see what the reading is tomorrow morning at the normal weigh in time and use that as the new mark. Depending on what it says I may move macro targets to a 30 Protein/60 Fats/10 Carbs mix and try harder to consume closer to 1100 cals a day to see if that kick starts things again.
Picked up some 80/20 ground beef to do up some of my own smash burgers this weekend or experiment with a ground beet noodle-less lasagna or casserole type thing. I found a site that will gen up a ‘nutritional label’ based on a recipe you input. Seems like a good way to keep track of intake when making a meal with multiple servings. We’ll see how ambitious I get.
Hope everyone has eating plans set and are ready to enjoy the weekend. Cheers everyone!

I follow the traditional ratios 5 carb/75 fats/20 protein. It's important to track protein(1g per kg) as well as net carb.
Best wishes for your plan :)

FYI - this site generates a nutrition label in the cook book part if you input a recipe. I use it all the time - slick!
