1 cup peanut butter (lowest carb you can find), 1 egg, 1 tsp vanilla extract, 1/2 cup baking splenda or sweeten to your liking. Oven preheated to 350 degrees for 10-15 minutes. Oh and do the criss cross pattern with a fork before you bake.

I forgot to mention baking powder...omg...hope nobody made this without it haha...I throw in like 1 tsp baking powder too
