Microwave carrot cake-
1/4c ground chia seed
3-4tsp erythritol
1tsp baking powder
1/2 tsp cinnamon
1 lrg egg
1/4 c. Veg. Oil ( could use coconut oil)
1/4c. Carrots
1 tsp vanilla
Opt. 1/4 c walnuts
(Could add a piece of pineapple if wanted)
I mixed all the dry then put the oil, carrot, and vanilla in the bullet and mixed in egg and carrot mix. Microwaved for about a 1.5-2 minutes.
