Created a gluten free version of my cottage cheese fritters. OMG. I wish I entered it before eating. I replaced flour with half the volume of coconut flour. Ended up with crumbles instead of dough. Added more eggs and some cream to soften it up. The result was OK, not perfect, from taste perspective, but palatable. The total number of calories for breakfast is half of my daily allowance though. I also had to add twice as much sour cream as normally as they were still dry. I either have to try some other gluten free flour or forget my cottage cheese fritters forever, the result is not worth the calories. The original recipe was not the lowest calorie breakfast possible either, but the coconut flour version is out of question for the future. Good I have FS to keep me honest. They did not look like calorie bombs.
