My wife likes her fried eggs flipped and cooked on both sides. I usually manage to break the yolks. Best way I've found to fry eggs is with a skillet that's got a lid, get the eggs going and put the lid on and let the steam cook the top. Unfortunately my wife doesn't like them that way, even more unfortunate is that she mangles eggs worse than I do when she tries to flip them. Me and my daughter prefer them scrambled, anyway. lol

She wants them over easy, when the yolks don't break it's usually because they're already over medium.

Not omelet related, but couldn't help posting. LOVE eggs (any way they are prepared). I think they are also interesting because of the variety of ways that eggs are preferred. My wife & kids like scrambled eggs cooked till they are brown and "pop like popcorn" in the skillet. The exact thing the cookbooks and shows say not to do. Even though the "popcorn scramble" is not my favorite, I still happily eat them. All y'all have a great weekend.
