Homemade ginger-peanut sauce... I am impressed and now want to make this for a salad dressing....

Pegster-- it sounds more elaborate than it was 😉 Tablespoon of peanut butter, splash of soy sauce, a smidge of red pepper, grated some fresh ginger into it, then mixed it with enough water to make it a sauce like consistency. I used berbere (an Ethiopian spice blend) for the pepper because I had some on hand, but you could use red pepper flakes or ground cayenne. I also used a fresh ground peanut butter from Natural Grocers that doesn't have anything in it but peanuts and salt. It would probably be fine using regular peanut butter, if that's what you have. This made enough for one salad, but you could certainly increase the amounts for a larger quantity

KAGrimm-- I refuse to suffer on ANY diet! 😃 I'm frankly way into food, and I take any limits on what I'm eating as a challenge to figure out new, tasty things to cook

Jergens -- I found a wonderful app if you're going more plant-based called Dr. Greger's Daily Dozen. It's a checklist of what he believes should be in a healthy plant-based diet: berries, beans, nuts, leafy greens, exercise, etc. If you're not vegan, some of it may not be necessary for you (like 3 servings of beans), I don't ever hit all the checkboxes, but I find it motivating to get as many as I can

Edamame, is it good? I've never eaten it before. I see how beneficial it is. I was looking at it yesterday online. our Sprouts store carry it even like a spaghetti. hmm?

la tor2ga -- I really enjoy edamame, but I've never met a veggie I didn't like. You can buy microwaveable edamame in the pods. If you eat fish, it pairs nicely with tuna in a salad with a sesame dressing. If you want to try before you buy,, some restaurants have edamame as an appetizer. You can also get roasted, salted edamame that makes a nice high fiber, high protein, low fat snack. It's one of my go-tos for snacks to keep stashed in my office.

Hope you like it, LivinBreezy! I haven't bought salad dressings in years. It's so easy to toss together a vinaigrette or something like this, and no mysterious ingredients to puzzle over. I shy away from foods with ingredients I can't pronounce 😉

writingwyo. Thank you. I love veggies as well. Years ago, I noticed that veggies are the first thing I eat on a plate and the last. Obviously my "go-to" taste. Yet I don't want to be a vegan. Hmm??? Interesting. Anyway, Wed is senior day at Kroger and a 10% discount is always nice. I'll pick some up there, then. Hopefully, if not we have a store called Sprouts and they carry them. Thank you, I'm anxious to try them. :)

Frozen edamame have become really common, so the regular grocery will likely have them. If you want to try the roasted ones for snacks, you'd probably have to get those from Sprouts. Nothing strange about loving veggies and not wanting to be vegan. I doubt I'll ever go absolutely 100% vegan, no exceptions, just working toward mostly. Let me know if you like them! 😃
