Good morning FSF 💙

Meal prep is probably one of the hardest things for me to do. But I am DETERMINED to get better at it, for my budget's sake and my proactive peace of mind.

Here's just some ideas...of course, everyone's dietary regimen looks different.

It snowed here in the PNW yesterday and the forecast calls for more this week. Just a dusting really, but the overnight temps are in the teens. How unfortunate that this cold snap came just when my bare root tree starts arrived from the Arbor Day Foundation 😨 That really throws a monkey 🔧 into things! 😂

It took me a while to work into a sustainable pattern. And I finally settled in with batch cooking. I'll cook 2-3 meats in 4-6 different methods & seasonings so lots of variety. I always have salad fixings on hand. And I batch cook a variety of vegetables. At mealtime, all I have to do is plate my choices from all I have cooked and microwave. Then I have days that all I crave is eggs! I cook eggs fresh though, and I always keep batch cooked bacon, ham, or sausage in the fridge for eggs meals. I plan meals, then shop. I buy groceries only 1 time a month now.

Wow Nancy!! Thanks for sharing your success! I will definitely use some of these ideas 💡 (p.s...how do you make your salad fixins last so long? That's what I have to run to the store for every few days....ugh)

Hi Crystaljo! I'm glad something I said might help someone in this journey! As for how I get my salad fixins to last a month...I buy 3 types of lettuce (green leaf, romaine, iceberg), wash & spin each in my salad spinner, then store each in a big container that allows all water to drain beneath. And I check regularly for any bits going brown and tear them off or remove a leaf now and again. Green onions...in a glass or jar on the table with just enough water to cover the roots. I haven't yet bought groceries this month but I still have fresh lettuce and green onions.

Other things for Salads I wash & store. Celery gets double bagged (just in plastic bags, air squeezed out, lasts 2 months for me). Broccoli, cauliflower, pretty much the same. Cabbage lasts forever if you pick a really green one. And since I'm keto, I always add deli meats/Cheeses, make my own salad dressings, add boiled eggs sometimes plus pepperoncinis or some other Pickled thing or another. Took me a while to get to this...I tossed loads of lettuce and other veggies before I worked it out how to get them to stay fresh longer!
