This week, Greece was the destination with a well received moussaka (layers of potatoes, eggplants, onions, tomatoes, ground lamb & beef, herbs & spices, dry mizithra sheep cheese, béchamel with eggs) that took forever to prepare. 370 kcal for this 7oz serving with fat-free milk and oven toasted eggplants (they are traditionally fried in olive oil). Still very fat because of the butter in the béchamel and the cheese, both of which could be reduced. 28% carbs, 47% fat (120mg chol), 25% prot (24g), let's call it keto-friendly. I paired it with a grenache-syrah from Paso Robles, think côtes du Rhône clone to stay Mediterranean while supporting local producers.
