2 eggs, 1 tbsp coconut flour, 1/4 tsp baking powder, 1/4 c cheese shredded (your choice), Can make sweet or savory with add-ons. Mix it all up in a bowl or cup. Makes 2 mini waffles. (each takes 3-4 min to cook). Tiny bit dry. Add tbsp water? Enjoy. Less dry with almond flour, but coconut flour has nice flavor.

I missed bread. And my default in a rush breakfast has been an egg sandwich from Stewart's. The egg was fine and the roll wasn't. Still looking for a crusty bread type food minus the carbs.
