What What! I made some awesome stuff tonight... love cooking so I get a high from it! I was a busy bee, blending up some fresh Almond Milk, used the almond pulp to make Almond cookies. Made a grilled "cheese" sandwich with some Soy Cheese I made last night and olive oil spritz and garlic salt on the bread to pan toast the outside.... mmmmmm, tasted like cheesy garlic bread. The grilled cheese was an afterthought to my actual dinner of veggie wraps with eggplant hummus... but I was really craving something salty and breaded.

You make your own almond milk? ? ? ? WOW :) and cheese? I have made a paneer before but that was a major undergoing. KUDOS! :)

Almond milk is ridiculously freakin easy. A monkey could make it, I swear! All you need to do is soak 1 C raw almonds (not toasted, not salted, not candied ladies!!) I soak mine while I'm at work or overnight. Drain the soaking water, dump almonds in a blender with 4 C water and zippity-do-dah. In about 2-5 minutes you have a lovely milk. Just strain with a nut milk bag and bottle up. Some people add a tablespoon of honey or maple syrup, or vanilla and sugar... whatever almond milk you like, add your flavor while blending. The pulp that strains out is Almond Meal! Just like the crap they charge and arm and a leg for in the grocery store. I add a cup of flour, 2/3 c sugar, tsp of baking powder, 1/2 melted butter, and a few drops of almond flavoring... bake at 350 and viola! Almond cookie to eat with your almond milk...hahaha.
