How do other Atkins dieters during the Induction phase get their daily 12-15g of 'Foundation Vegetables' in ? What is your 'mix'?

Curious to know. I need to tweak mine somehow, but I'm not a fan of raw veggies. I don't mind the variety of lettuces, cucumber, celery .. but not much else. So I go more for the steamed broccoli/cauliflower to reach that 12-15g.

I'm feeling a lag in my weight loss. It's TOO EARLY IN THE GAME for this.

Not doing Atkins, but still trying to eat veggies. I like to take a variety of veggies (broccoli, cauliflower, baby carrots, zuchinni, squash, mushrooms) and toss with olive oil and sprinkle with a little dry ranch dressing mix and broil at 425 degrees until they start to caramelize a bit. Yummy! Also, I take asparagus and also sprinkle with olive or coconut oil and ranch dressing or balsamic vinegar and throw on the grill or in a skillet to get a little charred. Your pan must be very hot to char the asparagus a bit but not overcook. Btw, broiled broccoli is to die for! Happy eats!

I always keep baby spinach around for ceasar salad. I love to use mushrooms and zucchini as a base for fried eggs; the soft yolk melting into the veggies is delish. I also use celery sticks as spoons for my buffalo chicken dip (shredded chicken breast, cream cheese, blue cheese crumbles, and Franks red hot sauce.) Another favorite is cucumber slices topped with tuna salad. Vive a la veggies!

I use mushrooms and zucchini for fried eggs too! Take a head of cauliflower, hack it up, put it on a roasting pan with some olive oil, salt and a little parmesan on it and then roast it till it turns brown on the edge. It carmelizes and tastes outrageously good. I leave the cooled tray out on the counter and it never lasts, even the kids pick it clean.

Omg, I've gotta try that Buffalo Chicken dip (Thanks Eonada!) and that Roasted Cauliflower with parmesan! Great ideas, thank you thank you! Also, I really should get some mushrooms; I LOVE them with eggs, and that would help get in my 12-15g of FV in. Thanks so much for your ideas. :):)
