So, I tried the spaghetti squash last night. I baked it in the oven and then scooped out the strands. I made a meat sauce with lots of veggies and it was fantastic! I told my DH that we would definitely have to do it again! I don't think he thought it was fantastic but said he would eat it again.

Today is my coworker's birthday, the very person I go running with at lunch. And already there is a ton of treats here at work to help her celebrate, brought in by other coworkers. I think I'll be able to resist but tonight we've been invited over by her hubby for dinner and I know there will be lots of food there, plus I'm supplying the cupcakes for the event. And she loves chocolate! Oh well, will have to get back on track tomorrow!!!

Glad you liked the spaghetti squash! Much lower cal than pasta!!! My husband is not a big fan, so sometimes I'll make both. What does DH stand for? Good luck with the birthday celebration :-)

I did spaghetti squash last night too but a bit different, it's called Spaghetti Squash Au Gratin. I first turned it upside down on paper towels in the microwave after cutting in half and taking out the seeds. Cooked for 10 minutes. Combined 1 tbsp of butter plus 1 onion in the frying pan till just turning brown. In a bowl 1/4 cup sour cream, 1 tsp thyme and 1/2 cup cheddar cheese adding in the squash and onions when cooked stirring to mix it all together. Greased a square dish, dumped all the ingredients in from the bowl and topped it off with another 1/2 cup cheddar cheese after which I cooked in the oven at 375 for 20 minutes till just beginning to brown. My DH doesn't drool over the meat sauce version but he really liked this one as a side veggie, I loved it, was quite tasty and will be making it again as my garden was full to over flowing with spaghetti squash which need to be eaten up.
