This looks very interesting, especially with the ingredients you listed. Betting this dish was tasty. When I used to use ginger it would be desserts like ginger snap cookies. :).

kattay, fresh ginger is used a lot in eastern and mid-eastern cuisines. I love it and it is so good for you.

I do drink ginger peach tea. Hopefully I do get some benefits from doing that. I have read how good it is for the body. I'll probably look up some ginger incorporating recipes. Got some time on my hands :)
