Delicious breakfast of Ricotta & Strawberry whole wheat pancakes and peaberry coffee brewed from beans from Maui; ah, what a perfect start to a Saturday on this holiday weekend. My partner wants to have some later with whipped cream on top, lol. I lightened up a Whole Foods recipe and they were soooooo yummy!

So first, hick that I am, I had to google ricotta :-) I've seen it in stores but never had it and now I WANT some - sounds fabulous. Can you set an extra plate for me for breakfast ~ be right over!

C'mon over, Bella! I used fat free ricotta, nonfat milk, cholesterol-free egg substitute; made it really reasonable for a rich-tasting breakfast treat. Lunch was grilled chicken breast with Killer BBQ sauce & a mess o' greens from Russel Street BBQ (uses local produce & meats, good stuff), mmmm. As a treat I made some Banana Balls using dark chocolate peanut butter, banana, oats, snipped tart cherries, honey, and a touch of cinnamon, rolled in unsweetened coconut. They are chilling now; looking forward to trying one. Who says holiday eating has to be unhealthy? :o)

Ricotta ROCKS! I use it when I made lasagna, in with the parm and mozerella, My favorite is Manicotti! I make my own shells like crepes too, sooo good. Your breakfast sounds DEVINE! and classy! I better go to sleep, this food is sounding yummmmmy, and your lunch, BANANA BALLS< HA, never heard of those!!!
