Crepes are so thin that I don't count them as crap food, unless they are used for desserts like crepe Suzette. I made ham and gruyere cheese crepes last week. Yum!

Metamora, when I do salted crepes, I don’t use vanilla sugar but equal small amount of sugar and salt to balance. And yes, they it’s ham, egg and shredded cheese 🧀 💗

My grandma has an old recipe, she never called them crepes, but Swedish pancakes, maybe it was an old recipe of hers. But they are definitely a type of crepe. She always would put a small amount of her homemade jams in the center, roll them up, and sprinkle powdered sugar on top. Hence “roll up pancakes” lol

Bruce, I used coconut, hazel and almond flour mixed altogether and more eggs, 2 or 3. Almond milk too. Coconut milk could be an alternative. Cooked with coconut oil. But you can also use ghee. Ghee is amazing. I don’t have a recipe because I just mix stuff.

When you say 85 flour, it reminds about my baking days. Bought big bakery bags of French flour. Had fun with it. Piece of the past. What I learned, like bakers percentage, come in handy now when my 'dough' is made from of completely different ingredients. Didn't have luck with the ghee I got hold of here. It had a strange odor. The pictures you got there looks good. Can see why the kid request it. Part of my keto education has been to learn about flour and our body. The end result is that I no longer consider it to be food. For me that was a good thing, as I used to love it in my obese days.

I don't have hazelnut four or ghee. but saw hazelnut flour at the market.
I'm currently baking loaf of almond bread.
Not sure what ghee is yet..
