Today I ate a little more than half Mexican pastry expecting the worst... nothing happened...no stomach cramps no diarrhea... I don’t understand this.

My stomach was always weird like that too. Once you think you know what to expect, it doesn’t happen. That’s why I think there is a threshold that has to be met, a tolerance level, which makes things even more confusing. 🤷🏻‍♀️

I haven’t been keto for a while now. I eat keto/low carb meals but the amount of carbs in the types of veggies I’m eating is higher keto levels. Trying to find a balance now that I’m fighting again. I get cramps on super low carbs and get my ass kicked, I’m around 30-70 grams most days now. I introduce biscuit, a cookie, part of a protein bar, something carby to see how it affects me before the workout. I was expected death yesterday but I got nothing.

Maybe you have built up the good bacteria in your digestive system, so your tummy had no problem digesting the carbs. Just saying, because that's what happens to me from time to time. Hope you keep feeling good. 👍
