Lunch! Chili(with chunks o' brisket) and low carb almond flour based biskets. One has diced serrano and extra sharp cheddar. Low carb is so torturous!

Dave, did you say you are a chef? Or do just think that from your professional looking food pix?

Brisket! Even USDA Prime brisket is often cheaper per pound than low grade hamburger meat. (Lower grades are often under $2/lb) You can dice and slow cook it the usual way but dicing up smoked brisket and adding it to ground beef is awesome. I'm almost salivating thinking about smoked brisket!

it does look great!

Where do you live Dave? Under $2 a pound??!!

It takes more skill than I have to make a good brisket using low grade meat. Some experts insist on using the lower grades. I'm not a pitmaster so I need to cheat! If you want to blow people's minds, get some of the American Kobe Beef brisket!

Meats are costlier here in LA. Not like the FLA, but sale prices at the working class neighborhood stores like Smart & Final, sometimes. Reminded me to prep a St. Louis cut rack for tonight. Snagged it for 2$/ # last week. Should be more sale items today. I like the almond flour biscuits, maybe I can include AF again soon.

Country Style Ribs and Boston pork shoulder butt are pretty cheap at Costco, good quality too. Prime brisket should be in the $3-$4 range there too. I'm marinating CSR's in an odd mix of diet cherry Dr. Pepper, soy sauce and spicy bits right now. Will sous vide then sear half and straight smoke the other half.

Cerobit- I sent you a pm

My Walmart doesn’t carry brisket 😒

Do you have a Costco nearby?
14 Aug 18 by member: davet58
Yeah no. The local Costco’s are picier than S&F sale prices. I would brave the crazy Marina Del Rey Costco for cheap meat, believe me!

I do but no membership. My mom has a BJs membership maybe they have good deals there as well

Know anyone with a membership? You can go in with them. USDA Prime is what they carry. It's far superior to ungraded meat and even USDA Choice. However, when I've made the low grade $1.96/lb meat in the past, people still seem to inhale it all the same! But if I had a choice, I'd go with only Prime or American Kobe Beef. (can't afford the real Kobe!)

Cerobit- I think S&F might have Prime.

Dave, I’ll check on the prime next time at s&f. Prolly should up the grade, as my boy and his mom only like good beef.
