I find celebrations hard (just for the diet I mean). But it’s important to enjoy them and not stress about it too much. Sounds like a fun time ahead!

This cake is not that common here. It is scandinavian apple cake. It is served warm with a side of cream or ice cream. It has four apples pushed into a dough. It is a nice one.

Recipe: whip 150gram butter and 300ml sugar white. Add 3 eggs stir. Add 350ml flour and 1 ts baking powder stir. pour into a buttered and floured springform (I use 10 inches). Top with 3 to 4 sour apples (if not sour add a bit of lemon). You push the wedges into the cake. Some do nice patterns. sugar, cinnamon and chopped almonds almonds. Bake at 350 for an hour or longer. This one took an hour and half it had some much apple in it.

We were celebrating the British monarch with a mixture of Japanese sushi, Norwegian apple cake, Canadian hockey and Swedish vodka. As it should be here in Canada.

Cake sounds very interesting. I was involved in the wedding of my Indian neighbor’s daughter. 3 days of dancing and food and food and did I mention food. I had no idea what I was eating most of the time but I sampled it all and it was so delicious..
