I haven't been here on fatsecret in about a month. At the time an inebriated driver hit me and I was in a lot of pain from the car accident. (Her court date for her OVI is tomorrow. She pled not guilty and I was subpoena'd to be a witness/victim.) I've been seeing a chiropractor and I feel almost myself again. I was looking at new cars and have you SEEN the new civic hatchback from honda?! If a car could be handsome, that car is definitely it!
In this past month, not having a car meant I couldn't really just go and grab some food quick. So I've been cooking more of my food! I haven't really lost must of anything, but that's because some days I'd overeat.
I'm ready to get into keto again. I was thinking of having steak and eggs or bacon and eggs for dinner. NOM. Today I ate some deli turkey with some homemade mayonnaise! Whole egg with vegetable oil, sweet-hot mustard, apple cider vinegar, salt, pepper, garlic powder, and sriracha. I blended together with an emulsion blender. Honestly I went to sparingly on the seasonings it's weaker than I expected but it still turned out great.
Anyone interested I pretty much followed this recipe from Serious Eats: https://youtu.be/uMzcrTRn3Zs but no lemon juice. Mayonnaise keeps about as long as (or a bit past) the expiry on the egg carton. Trust me, you'll know when it goes bad.
