feeling pretty good about maintaining over the last week and a half. i went to mexico for 9 days and kept eating vegan but ate ALL the guac, drank a lot of margaritas and ate A LOT of tortillas and tortilla chips. I felt a little bloated on my return trip and for sure thought i gained some (even if some was just water weight) but seeing the scale not move was great. i wasn't overly active on the trip either. i am back on my meal preps and doing pretty well tracking. i definitely NEED to track regularly because it helps me so much to stay focused and not mindlessly over eat. i am still figuring out to manage my calorie intake on a vegan diet. a lot of vegan foods are low cal but a lot of the proteins/carbs can also add up quickly so i need to be careful and diligent still. i am still figuring out how to balance my protein intake and not rely heavily on processed foods or too much tofu, trying to keep it to a few times per week. it is all a learning process. overall all i feel so good eating vegan - it is so nutritious and i can tell my body is happy with me. it is a good feeling!
