Some stability in my weight, at last! I have been eating mostly ground beef during the last few days/weeks because I love it!

Such a lousy day today weather-wise. There was supposed to be heavy rain for 5-6 consecutive days, but there was a bit of sunshine yesterday and it's supposed to be nicer tomorrow. I'll take what I've got I guess!

I made some keto-friendly condensed milk based on an online recipe. Not quite like the real stuff (I may have messed up with the simmering portion of the recipe because there was not as much reduction as expected), but still good-tasting. With this condensed milk, I was able to make some fudge that can actually stay at room temperature without melting! I keep this fudge in the fridge. It doesn't taste as sweet as the other fudge recipes I used to make, but the others acted like ice cream and could only be stored in the freezer!

Last night, I also made a no-churn ice cream recipe with some of the remaining condensed milk before it goes bad. I'll give it a try later today and hope it's not a failure! It's hard to make good keto/low-carb ice cream! Sometimes I think about using xylitol instead of erythritol so that the ice cream doesn't become too hard (I don't have pets), but I never get around to it.

Oh well have a nice weekend people!
