Sauteed kale, pitted black olives, and beetroot seasoned with lemon juice, paprika, mixed herbs and salt. Served with a third of a packet of microwaveable golden vegetable rice, some vegan cheddar and a dollop of humus.

Thanks CG84! We are well, thank you! We spontaneously went to see some live jazz last night and they'll be playing monthly now so we're looking forward to the next one too. Hope you and your girls are doing well too! xxx

Thanks Nunido! I didn't like kale much either at first, but then discovered that it's much nicer cooked and if eating it raw it benefits from a bit of massaging to make it more tender and less bitter. I massage it with just lemon juice when I'm having it fresh (which also increases the absorbtion of iron from any leafy green). The vitamin C in the beetroot also helps. It's such a nice change from boring old baby spinach I was eating all the time, but I'll probably go back to that at some point as well - or mix it up. Hope you give it a go and see if you like it.

Honestly I only eat kale in a stew, and that's once in a blue moon. Never heard of lemon thing, it's worth trying, thanks. If you have low iron (don't know if you do, just saying as an info 🙂) go for cooked or blanched spinach, rather than raw.

Nunido it doesn't have to be lemon juice - it's the action of massaging for 3 minutes that makes it more palatable.
