i am feeling pretty good, i am working on building a whole food, plant based lifestyle and diet. i have always been a big eater and snacker, but by eating this way, i am able to feel full and sustained and not restricted. i think this is a way of eating i can work with for the long term. by cutting overt fats, i am able to eat a large volume of food for pretty little calories. this week, i haven't been perfect but i still saw results. for example, my boyfriend returned from a trip to NYC and my request was some NYC bagels, obviously this does not ever happen, so i enjoyed the opportunity to eat some delicious NYC bagels and cream cheese - it was worth it, and because my other meals have been low cal, i still stayed on track. also, last night i had a higher fat meal - vegan BLT's because i had a beautiful heirloom tomato from my garden to enjoy - and i really like the way bread and mayo all come together and i blew a lot of calories on vegan mayo to just enjoy it fully. i still stayed on calories. i probably wont be eating refined carbs at this regularity so it's okay for me, and it feels like a good balance.

i am trying to cut oil completely in my home cooking, and honestly i don't miss it too much. the trade off of no oil is to be able to eat more - then it's worth it to me. And honestly, stuff like sautéed veggies or a soup really don't need the oil to taste yummy. i made a big batch of rainbow soup this week and it was so hearty and delicious - i will keep that up. i really need to stick with this this time. which i've said a thousand times. i will probably fall off and "fail" at some point, but i am going to try and commit to picking myself up when that happens. a motto i heard recently was, progress not perfection - that's what i am going for.
