Sorry it took me so long to respond @cjwill! For the chicken I marinated 5 thighs in 3/4 of a cup of Cesar Salad dressing for about 4 hours. I cooked them for 30 minutes at 400 F (they were small-ish). For the veggies, I sauteed 1 large sweet onion, 1.5 large sweet red pepper. Once the peppers and onions were nearly done, I added one large yellow squash that was cubed, and cooked just for a couple of minutes. I sprinkled the veggies with taco seasoning, and added two medium diced tomatoes. And the rice was just drizzled with a little bit of tempura dipping sauce. Super fast/easy!
