Yowza. My blood sugar was the roller coaster of the carnival rides yesterday. I prefer the carousel; boring but safe. Sure the highs rendered me immune to gravity and had me bouncing from the recliner with ambition to pursue projects but the lows were a bit spooky especially when one came while I was high up a ladder.

All my fault too. Pushing to finish the yard or window displays instead of stopping to eat when I started feeling weak. Not once, but twice? Come on. So today I'll be eating something every couple of hours hungry or not and I should be back on the carousel by tomorrow.

Speaking of carousels, I'm SO frustrated with my one horse town today. I watched a most fantastic lamb chop dish prepared on TV the other day so it put me back on the quest for a rack of lamb but nooooo, not in this town.

I have to call back when the moon is in the second house or something to speak to the muckity muck in charge of the whole department to wait to ask if they can even special order them for me because the people I did speak with had no idea what I'm requesting.

I gave up trying to ask about the caul fat also needed to prepare the dish. I spelled it twice and when I described what it was you'd have thought I was talking to a four year old. Seriously. "Ewwww... are you serious!?" Sigh. That's what I get for watching a cooking show on PBS.

Other than that it's noon here in Bellawood. The shop is slow, DH has had his lunch and I'm bored outta my mind. I wanna get OUT of here and do something. I have three old doors over in my storage and have been googling 'door repurposing' and there are so many creative ideas. I especially like the idea of using blackboard paint on one and propping it in my bathroom to write my daily affirmations. Then again, I could do that with the door I have already ... hmmm....

That's it. I must still be on the roller coaster today because my energy is peaking and valleying fast & furious. I just ate albacore tuna, pickles and black beans. Maybe a little protein will balance me back out and the customer that just pulled up will make my sales for the week ...

I am pretty lucky that I don't seem to be noticeably affected by sugar highs and lows as you and so many others are. One of my friend's hands actually start to tremble when her blood sugar is low. Me, I can go most of the day without ingesting a thing and have no issues at all. Odd how that is. Caul fat must be somewhat similar to tripe. I took a gourmet cooking class once and we made a stuffed chicken breast that was then wrapped in tripe. I thought it was mainly for keeping the stuffing from falling out but, it turns out, that the tripe made a lovely crispy "skin" over the whole thing when it was browned in a pan and finished in the oven. Some may think it's "gross" but then they've probably never tried it, either. Good luck with the carnival rides today. Here's hoping for more carousel and less rollercoaster :)

@Evelyn - yeah, I didn't understand what it was (Low Blood Sugar) and how it was such a contributor to my irrational behavior in the past. I remember once THROWING my wallet across the serving counter at someone in the hospital cafeteria to get their attention. I know PMS has been used as a defense on a lot of crazy acts but LBS has put me in much worse spots (before I was diagnosed).

So I think the answer is to get your one horse town to buy more horses, put them on your own personal carousel & you wouldn't need that darn roller coaster at all, and have all the rack of lamb & caul fat (of course, I've never heard of it either!) you need! I struggle with blood sugar issues too, and can get shaky, cranky, sluggish, etc when ive gone too long without eating. See you at the amusement park, my dear friend! Xoxox

I got home from work today and felt really strange - almost like a panicky/angry/scared feeling - I had a good lunch at 11:30 and it was only 4:15 or so. As soon as I had some of my raw vegetables and dip I started to feel better right away. Funny how not eating constantly lets me "feel" something - even though it wasn't a good feeling at all. Hope your customer proved to be profitable. :)

I can tell you are going bazzzonkers! do you have pinterest? I even find more craft creative ideas on there, its great! hooe ya rollercoaster comes to an end!

Bella, Tuesday morning, hope your blood sugars are under better control today and that you are feeling more level today if that is the right word. Wish I had a solution for the boredom, sucks to be trapped inside when the weather is so good and when you have so many ideas to do stuff. Could you compromise and close early :) It is your store and you are the boss? New summer hours perhaps? Something to think about. I like the idea of blackboard paint so you can write stuff - and yes you could do it on your existing bathroom door - something else to think about :) Have an awesome day Bella. Just an FYI, caul fat isn't at all like tripe. Tripe is the inner lining of a cow's stomach and is very tough (no fat). Caul fat melts away (it's pure fat from the stomach area close to the skin) and adds moisture and a bit of flavor to the meat you wrap it in. Bella, if you absolutely can't find it, a decent substitute would be wrapping the meat in cheese cloth that's been saturated with melted butter. I also live in that type of one-horse town, drives me batty. I got the exact same reaction that you did when I asked the meat department head (who took two weeks to reach...) for a three lb pork belly roast. He actually asked me what I was going to do with it. I resisted the urge to tell him, "Oh, nothing special, just use it in my monthly sacrifice and worship ritual...", and instead explained that I slow roast it until most of the fat is rendered and the rest is left very crispy and the meat is tender. He replied with, "Yuck, really?? Can't you just buy pork loin?" *sigh*

@Angel - hey, I'm not trying to feign sophistication either - I'd never heard of it until Hubert Keller used it in his recipe for Rack of Lamb Wrapped in Vegetable Ragout segment but it looked really interesting @Susan - when I got that feeling I tried having peanut butter while I was chopping my salad but it still didn't help me recover quickly enough - I thought I had moved past all that but I guess it's back for a while @Cathy - I called the head butcher today and he has to SURVEY for the lamb and it will be 2 weeks but he's not very hopeful about the caul fat at all .. sigh... @ Lizzy - I am beyond bazzonkers - I don't know what pinterest is ... @ Isabel - I could close early but that's when the phone rings off the hook and I worry about missing that 'big customer', you know. Sucks to be the owner sometimes - leaving early or calling in sick gets into my own pocketbook :: but still better than answering to someone else::: @ Raven - yeah, I think I'm going to have to substitute the cheese cloth too and I'm sure the recipe will withstand the substitute but this experience was a clear reminder of why I've never been much of a gourmet cook - most of those iron chef, pbs, etc., shows always use some ingredient that I'd have to travel to the far ends of the earth to attain and I'm reluctant to go much farther than the city limits for just 'food'! The lack of availability of some of the more delicious aspects of meat makes me sad. The "yuk" response to the fat in meat makes me sadder still-have people become so unused to cooking that they no longer understand that in the fat of the meat lies the flavor? The texture? The moisture? Let's not even get into the fact that butchers no longer run meat counters in grocery stores-once upon a time you'd actually get someone that knew their way around a carcass and could tell you multiple delightful ways to cook it.

@Colly - oh my, you got me started now, LOL. Yeah, when I was describing caul fat to 'Rachel' she took the information of 'it's the thin membrane of fat covering the sheeps intestine' with a response of 'Ewwww..... are you serious??' I'm not really sure which set her off more, the word 'fat' or the word 'intestine'. LOL. Then I phoned at least 10 different 'meat shops' under the 'butcher listing' and ... sure... if I wanted seasoned fajita meat, they were my butcher but rack of lamb... no lady, no way...' You know, I'm probably setting myself up for the same challenges with that art class mentioned in my journal today ... I'll be lucky to find a place that doesn't consider 'dogs playing poker' high art in this town....

Too funny...I cant even get GROUND lamb OR lamb chops here--finding rack of lamb would be akin to discovering Egyptian honey-marinated hummingbird's tongues in the snack isle, heh.

And, hey...Dogs Playing Poker IS high art! Just go to any bar in this town (there are 12...). They have one on their wall, front and center... :P

@Raven - LOL - I asked his highness the butcher if they would grind up some lamb & pork for me (as it's part of the recipe) and was told 'uhhh... yeah....okay... we don't normally do that but ooookay..' My DH told me to buy a food processor and do my own but I feel if I have to wait TWO WEEKS for a rack, then by golly they can grind a little meat. Crazy huh. As for the art, you know, you're right. All of our bars have those same paintings... I sure hope we study them in class or I won't have anything to talk about at happy hour.

LOL, Bella, don't you just love keeping up with local art "trends"?? One of our bars even has....wait for it....drum roll, please....a VELVET ELVIS!! *gasp* (I wish to heck I was exaggerating here, but I'm not...!) Speaking of art, here's another lovely example from where I live: my son bought me a necklace the other day from a local "art gallery" that contains a natural stone called Nebula Jasper. He told me that as it was being wrapped he was making small talk with the gallery owner. When the owner asked why he picked this piece, my son told him it was because his mom loved Van Gogh's Starry Night (this center stone looks exactly like it was cut from the sky in the painting!). The owner didn't have a single clue what my son was referring to. Very, very sad. But hey, I wear the stone over my heart and it has an extra special meaning to me (for several reasons, obviously!) so...I'm just glad the owner had it there for sale...

@Raven - you know, part of the reason I'm considering the art class is because I'd want to be able to nod with understanding if someone makes a reference like your son. I'll go ahead and confess my cluelessness that I did have to google the painting but that's the great part of being able to connect with so many different people on this site. I learned something new about art and thought of you while I was reading and viewing his paintings. I laughed when I read that he painted 'starry night' from his cell in the asylum - that is SO my future the way I'm going these days. Then I viewed many of his iris paintings and THIS MORNING I was browsing in an antique shop and saw one on the wall. It was labeled 'flower painting' and I thought 'hmmm... what are the odds that one is real...' but I was so proud of myself that I recognized the painting and artist that I didn't reach the 'scheming' part until I'd left the shop. Now I'm wondering again... hmmmm..... LOL Thank you for the inspiration.

Bella, thank you for that wonderful thank you! LOL I should have made myself clearer on the other post, though...I don't expect everyone to know of Starry Night--this art gallery owner didn't know who VAN GOGH was! I have a giclee print of one of his Iris paintings. :) I love that he painted Starry Night during one of his "lower" times, and have always been attracted to the coolness (blues) and the movement of it. The dark structure on the left side--everyone has a general theory to what it represents. I tend to think it stands for the painter, himself, dark and isolated from the rest of humanity in the beautiful town beyond...

Raven (and you are welcome) I like your idea; I can see that (NOW of course). My impression was fire/flames but dark like a slow burning aggravation at something. But then again, that's Me not him, LOL.

CLUNK. that was the sound of my jaw dropping that a gallery owner didn't know one of the most famous of European Impressionists. Sigh. (and if you get a chance, look up his pencil and line drawings, specifically those done in Montmajour-I have a print of one, it's mesmerizing, you can almost see the grass blowing)
